Bûche De Noël


# Sponge:

## Ingredients:

  • 4 eggs
  • 0.5 cup flour
  • 0.5 cup sugar
  • 1 Splash vanilla

## Recipe:

  1. 2 eggs + 2 yolks beat until light & fluffy with 0.375 cup sugar added in slowly
  2. Beat remaining 2 egg whites with remaining sugar until stuff peaks
  3. Fold flour into egg yolk mixture
  4. Fold egg whites in
  5. Bake at 410 for 7 mins
  6. Turn out onto moist towel
  7. Apply syrup if desired
  8. Let cool completely

# Ganache:

## Ingredients:

  • 12 oz chocolate
  • 4 cups cream

## Recipe:

  1. Make ganache with 1.5 cups cream and 12 oz chocolate
  2. Let ganache cool (on the counter not fridge) until it won’t melt the whipped cream but not so cold that it’s solid
  3. Make whipped cream with 2.5 cups cream and 1 tablespoon sugar
  4. Fold the whipped cream into the ganache

# Orange Syrup:

## Ingredients:

  • 4 Cups of orange juice
  • 0.5 Cups of sugar

## Recipe:

  1. 4 cups orange juice & 0.5 cup sugar (could maybe do less sugar) simmer for 30 mins, more or less continuously stirring

# Coffee Syrup:

## Ingredients:

  • Enough instant coffee
  • 0.5 cup sugar

## Recipe:

  1. 4 cups water + 0.5 cup sugar & appropriate amount of instant coffee, simmer for 40 mins, stirring occasionally so doesn’t burn
